Vernaccia di San Gimignano Docg

“VERNACCIA TORRI” Vernaccia di San Gimignano D.o.c.g.
€15.00First Italian wine to be classified as DOC in 1966, and since then DOCG thanks to its continually increasing quality. This wine goes back to the time of Dante and Boccaccio. Michelangelo mentions it in his writings and he refers to it as "the wine that tingles, bites and stings". It has always been a favourite amongst classy gourmets, princes and popes. In The Divine Comedy, Dante immortalizes it as deserving a place in Purgatory, where punishment for gluttons constitutes the absence of eel and Vernaccia! Interestingly enough some experts believe that the Tuscan Vernaccia originated in Liguria, in the Cinque Terre area, at Vernazza. Indeed at close scrutiny, the Vernaccia grape is not that different to the Bosco grape in shape and yielding capacity, although a little less in shape of cluster and colour.

“VIGNA DEL SOLE” Vernaccia di San Gimignano D.o.c.g.
€19.00The first Italian wine to be classified as DOC, and since then DOCG thanks to its continually increasing quality. It has always been a favourite amongst classy gourmets, princes and popes. In The Divine Comedy, Dante immortalizes it as deserving a place in Purgatory, where punishment for gluttons constitutes the absence of eel and Vernaccia! Interestingly enough some experts believe that the Tuscan Vernaccia originated in Liguria, in the Cinque Terre area at Vernazza. Indeed at close scrunity the Vernaccia grape is not that different to the Bosco grape in shape and in yelding capacity, although a little less in shape of cluster and colour. For this wine we carefully select the best grapes from our small selection of land, Vigna del Sole (our vineyard of the sun) The result is a more structured Vernaccia, with intense aromas, a hint of almond flavour and an excellently well balanced body.
Chianti Colli Senesi Docg

“FIASCO DI PAGLIA” Chianti Colli Senesi D.o.c.g
€15.00 – €19.00The straw-covered bottle represents the history of Italian wine. Over the years Tuscan wine and in particular Chianti, have been the symbol of Italian wine all over the world. Until a few years ago, when the wine was a natural part of our diet, the straw-covered bottle brought good wines on our table and contributed its part to enliven the daily banquet. After a dark era, the straw-covered bottle is coming back to be appreciated for what it is: history, culture, tradition and Italian craftsmanship. We should go on maintaining our tradition, this will be the best for us.

“CHIANTI TORRI” Chianti Colli Senesi D.o.c.g
€15.00n 500 BC, the ancient Etruscans were already cultivating grape vines in the Chianti region of Tuscany. "Chianti" is from the Latin word "clante", name of a local ancient forum of that era. The Colli Senesi area is undoubtedly amongst the best in the Chianti region and the wine produced there is of a very high quality. In this contest, San Gimignano occupies a distinct position because of its ideal soil and climate as well as its historical beauty. Here, Pietraserena, which has been described by Zeffirelli as "one of the most beautiful portions of the area", stands amongst the vineyards, on a terrain that uncovers Pliocenic sea shells till this day! The Chianti Colli Senesi is gained by adding a small percentage of Colorino and Canaiolo to the Sangiovese grapes. This wine is made with great care and it reflects the typical fine qualities of the region.

€35.00Rosso di Montalcino d.o.c , comes from the processing of Sangiovese "grosso' grapes , this can be considered as a "young Brunello' since it is stored only one year in oak barrels before it is ready. In 2015 the BIO certificate was obtained , showing how much dedication and passion was used in the production of this wine . Rosso di Montalcino - a complex and important wine from this exclusive territory.

“VIN SANTO PIETRASERENA” Vin Santo del Chianti Doc
€25.00Before the harvest, the very best of our Trebbiano and Malvasia grapes are selected in the vineyard and chosen for withering. The grapes must be virtually perfect in every respect to withstand this process, which takes place “under the roof” from September to December. The pressing then takes place approximately one week before Christmas. When the grapes have sufficiently withered, their sugar concentration is incredibly high and the must obtained is excellent: dense, syrupy and almost honey like. Fermentation takes place in very small oak and chestnut casks, which are kept under the roof. The casks have been sealed with wax or cement . Maturation takes place over a period of 3-4 years. From the freezing winter nights to the heat of summer and forever present breezes, the seasons rotate to create this nectar which well deserves to be called "Santo", that is “Holy”.
Cinqueterre Doc

“PIPATO” Selezione Cinqueterre Bianco Doc
€29.00 – €45.00A few years ago we had as a friendly consultant a great Tuscan oenologist, who was literally in love with the Cinqueterre. He lived almost in another dimension, struck by the landscapes, the streets on the walls, the sea and its sunsets, as by the unique and ancient way of "giving sulfur" with the cluster bunch of grapes, enchanted by ancient customs being a biodynamic, and therefore linked to the most sincere nature. One day he tasted the wine directly from the tub, looked at it, savored it, exclaiming: Ah, this wine is PIPATO by the angels. In the presence of an exceptional year like 2017, it seemed nice to us, as it is necessary to remember this thing, certain that he will appreciate it. To health, Federico!
“PIPATO” Selezione Cinqueterre Bianco Doc

Cinqueterre Sciacchetrà Riserva
€60.00 – €150.00The Cinque Terre Sciacchetrà is amongst the rarest Italian wines and it is world-famous. The ancient Romans produced it, Boccaccio speaks of it in his writings and Pope Paul III defined it as a “smoky wine of great aroma, with the colour of gold, agreeable but not sweet, not to be consumed during the course of a full meal; a nutritious wine especially for the elderly”. It is obtained by allowing the best grapes of the Cinque Terre area to wither over a long period of time. After fermentation, it is matured and refined in high quality small wooden casks for at least one year. We mature and refine our Sciacchetrà for at least two or three years, depending on the singular characteristics of each harvest. In the local dialect, the word “schiacchetrà” means “press it and forget about it for a long while”. This is the wine for grand occasions, very important festivities and anniversaries.
Cinqueterre Sciacchetrà Riserva

“TRA i MONTI” Cinqueterre Bianco Doc
€19.00The very first DOC wine of La Spezia and a witness to the history of viticolture in the region, from its very beginning. The landscape of this area is breathtakingly beautiful. The terrain is terraced and gradually sloping to the sea. In the vineyard the work is hard and strenuous and must be done exclusively by hand. Climatic conditions can be a problem, particularly sea breezes and gusts of wind. The vine is not allowed to grow much in height and more often than not maintenance is done on the knees. This wine is obtained from a selection of grapes from the vineyards in front of the sea.

“TRAMONTI” Cinqueterre Sciacchetrà Doc
€50.00This wine is obtained through the natural aging of the grapes which are selected before the harvest and picked late. Behind the production of this product is much hard work. The magnificent landscape in which we work is our consolation. The wine is matured and refined in small very old wooden casks.
Vermentino Colli di Luni Doc

“SUR LIE” Selezione Liguria di Levante IGT Bianco
€21.00This wine was borne by chance after a strange harvest in San Gimignano in the late 80’s. It has a few gram of sugar left and is maintained in uncooled cement tanks and is only decanted. The wine is not filtered before bottling, but remains in its natural state as it was born. The wine has left a mark, in that kind that people who drunk it can still remember that they did it. In 2011 there was a similar harvest in La Spezia: a beautiful Vermentino, also with considerable residual sugar. This wine was bottled without filtering it, too, but only cleaned by transferring it as did in ancient days. For us “the inventors”, without false modesty, it is an excellent product and we hope you can share this assessment with us. Thanks anyway.

“AMPELOS VERMENTINO” Colli di Luni Vermentino Doc

The fermentation is carried out slowly, at low temperature, in stainless steel vats. The wine is bottled in Spring and fits perfectly well the Mediterranean cuisine .

“IL PREFETTO” Vermentino Colli di Luni Superiore
€15.00 – €35.00The “Vigna del Prefetto” wine is obtained from 100% Vermentino grapes from Masignano (Arcola), one of the most famous areas for viticolture in our region, after pressing its golden and perfect grapes. Fermentation is carried out approximately six months, after which the cuvèe obtained is ready for bottling and put on the market, in late Summer. As far as we are concerned, this wine represents the best marriage between tradition and innovation, with absolutely no loss of quality. Light straw-yellow. Intensely aromatic and characteristic with a slight touch of almond and vanilla. Great with all grilled fish, shell fish and white meat.

Vine has been object of these movements and here it found its ideal ground. Albarola is a very old and autochthonous grape, born here thousands of years ago, and only grown here. It is one of the three vines composing the Cinqueterre wine. Very small grape, close, very sweet, typical.

“PIGATO” Riviera Ligure di Ponente Bianco Doc
€12.00Pigato is the whitest representative of the Ligurian Riviera di Ponente . It belongs to the large family of Vermentino from which differs optically for the many " dots " that appear on the skin of his golden grapes , and organoleptically for acidity a little more sustained and perfumes marked . The vinification follows the rules of modern oenology , with a short maceration and fermentation at low temperature to exalt the characteristics of the grape.
